Galayah Bandura

Traditional dish from the bedouin community, maybe you have tried it or you will try it during your stay in Wadi Rum. Simple but delicious, galayeh bandura is a vegetarian dish, very healthy and light. You can also find it around Jordan, sometimes with meat such as lamb or chicken. 
 
We eat it any time of the day, but I love to eat it for breakfast with khobez (arabic bread). 
 
Be sure to love onions, it is one of the main ingredients of this recipe! 
 
The recipe below is the way my family and I cook it. We usually prepare it directly on the fire. Hope you will enjoy, sahtein

Galayah Bandura Recipe

Ingredients

2 tbsp olive oil
2 yellow onion finely diced
6 tomatoes
salt
1 tsp cumin

Instructions

  1. Cut the onion finely diced and the tomatoes
  2. In a frying pan over medium-high heat, heat olive oil. Add the diced onion, and saute for 3 minutes
  3. Add the diced tomatoes, and put the heat lower to simmer and cook until tomatoes are soft. Add the cumin and the salt to your taste.
  4. Enjoy your galayah!
